For those who haven't seen the entire Friends Food Family website, this is an old-fashioned oatmeal cookie recipe passed down by my grandmother, Alexandria Richards. It was the very first blog post. (See November 2009 Archives) This oatmeal cookie recipe is a family favorite. What was once a plain oatmeal cookie was doctored into something incredible as sometimes you had raisins, other times it was chocolate chips, not enough oatmeal, add some Wheaties. What I like about this recipe is the brown sugar and butter base, perfect for an oatmeal cookie.
Ingredients
1 cup of softened butter
2 cups of light brown sugar
2 eggs
1 teaspoon of vanilla
2 cups of flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of salt
2 cups of oatmeal (not instant)
1 cup of crushed Wheaties (I pour them into my hands and crush them lightly)
2 cups of chocolate chips (I use Nestle Chocolate Chips)
1 cup of raisins
Cream together the butter and brown sugar. Add eggs and vanilla until well blended. Add the flour, baking powder, baking soda and salt and mix until blended. Add the oatmeal, crushed Wheaties, chocolate chips and raisins. The batter will be sticky. Use a rounded tablespoon portion for each cookie. Bake at 350º for 8-10 minutes or until dry and slightly golden. For those who like would like an updated version, try Ghiradelli 60% Cacao Bittersweet Chips and cherry-flavored Craisins.
