Growing up, meat loaf was a staple at our house. Served once every other week, it normally came accompanied with a baked potato and canned peas. It was on odd combination of ingredients but it always tasted good. It was even better if you got to have it served up on white bread for the following day's lunch.
This recipe was always eye-balled, one egg, a handful of this and a squirt of that. We served it last night and by the time I got ready to take a picture, it was gone. So much for lunch!
Try this recipe, it's easy and cooks perfectly every time.
1. 1 pound of ground beef (or meat loaf mix). If you use ground beef I use 85%.
2. 1 cup of Wheaties
3. 1 egg
4. 1/3 cup of ketchup
5. 1 can of Campbell's Vegetable Beef Soup
Mix first 4 ingredients together. As you add the Wheaties, pour them into your hand and crush them. Place mixture in a loaf pan and pour the soup mixture over the top of the meatloaf. Pour it as is, do not add water. Cook in a 350 degree oven for about 45 minutes (depending on thickness and oven temperature.) The meatloaf will appear golden brown and bubbly, make sure the middle is cooked. Serve it hot with a baked potato and canned peas, if you'd like to re-enact my childhood dinner.
Truthfully, I like it best with garlic smashed potatoes. Enjoy!
