It's been a long week and sometimes you just need a great comfort food with little effort. How much effort could a four ingredient meal take? Not much! That's why I dedicate this recipe to all my friends and followers who sometimes look at these recipes and say, "What is she...crazy?"
This is a wonderful (old-fashioned) meal served on a cold night when the last thing you want to do is cook.
Ingredients
1 pound of ground beef (85%)
1 - 16 ounce box of elbow pasta
1 bottle of tomato juice (32 ounce bottle)
1-2 tablespoons of butter
Preparation
Heat frying pan to medium-heat and place beef into pan. Saute beef until no longer pink. Pour off excess grease and add 3/4 of the tomato juice and allow to come to a boil, reduce heat to a simmer. Cook elbow pasta according to directions and strain when it is al dente (2 minutes early). Mix pasta with tomato/beef mixture and add butter. Let sit for five minutes and then add the remainder of the juice. Stir and serve.
For those who want to jazz it up, add 1 small onion and/or 1/2 green or red pepper (chopped) when cooking the beef. We have made ours many different says but I like it simply as is...with toasted garlic bread, of course.
Now relax, dinner's ready!
