There is nothing better than asparagus wrapped in prosciutto. It's one of the best and easiest appetizers you can serve to a group of people. For me, it's like candy. When the prosciutto is grilled, it caramelizes and gives you that sweet taste. Combine that flavor with the asparagus and it is to die for. We have served this on numerous occasions and it always seems to be a favorite.
1 bunch of fresh asparagus, remove lower 1/4 of asparagus stem
1/2 pound of imported prosciutto, thinly sliced
Olive oil, salt and pepper
After removing the lower stems, place the asparagus in a bowl. Toss with 1-2 tablespoons of olive oil, and a pinch of salt and pepper. Wrap 1 slice of prosciutto around each asparagus spear. Place on grill over medium heat. Turn until all sides of the prosciutto are golden. About 5-7 minutes. Remove from grill and serve.
It doesn't get any easier than this!
