Sorry for the slightly late Monday (into Tuesday) night guest chef video. My daughter, Danielle, is getting the last of her applications together for DICA (I don't know what it stands for either...) so she can apply to her Registered Dietitian's program in June. Needless to say, I didn't get to the computer.
The video I have here is on tempering chocolate. It is presented by Chef Todd Mohr who is a chef and educator with a complete on-line video series of cooking tips and recipes. I know that over the years, I have tried to melt chocolate in different capacities whether in the microwave, on the stove or in a double boiler and have burned it to the point it seizes. This is a great video that walks you through the process for getting the right temperature when melting chocolate.
If you are really ambitious, after you are done tempering the chocolate, you can make some homemade chocolates for Valentine's Day!
