Warning! This could be the BEST salmon recipe you have ever tasted. I had to state this upfront because the picture won't do it justice. (I know...horrible, horrible picture.)
I have to start with an apology. Hunger got the best of us. When we made this sesame salmon with ginger sauce recipe the other night, it was 7:30 PM when we finally sat down to eat. This beautifully cooked salmon came out of the oven, pretty as a picture, and everyone grabbed for a piece. It wasn't until we finished that I realized, "Oh, no food left for a picture". I can't tell you how often this happens. If I actually posted all the recipes we have made, I'd probably have an additional 150 posts. Sadly, we don't make many recipes twice because we are always looking to blog on something new and exciting.
This salmon recipe was very easy to put together: Step 1 - The Rub, Step 2 - The Marinade. The rub smelled heavenly as we ground the coriander seeds for the recipe. The marinade was wonderful, too, as we chopped the fresh ginger and added orange juice. We changed the cooking technique a bit as we like starting our recipes in our Le Creuset Square Skillet Grill pan and then allowing them to finish cooking in the oven. The sauce reduced a bit more, making for a delicious glaze versus a sauce.
The flavors on the salmon were wonderfully blended with a hint of coriander and the sweetness of the orange and ginger. I love using fresh ginger because it also cleanses the palate. There was no fishy after taste which you sometimes get with salmon. All of us agreed, for all the recipes we have created with salmon, this by far has been the best.
I know we will be creating this recipe again, I promise to take pictures and re-post the results. OR, maybe our loyal fans could post comments and pictures and tell us what you thought!
(Adapted from a recipe from Food.com)
Ingredients:
2 tablespoons of sesame seeds
1 teaspoon of fresh ground pepper
1 teaspoon of coriander powder (If you have seed, then grind them to a powder.)
½ teaspoon of salt
2 (6 ounces) salmon fillets
½ cup of orange juice
3 tablespoons of honey
¼ cup of white wine
1 tablespoon of soy sauce
1 tablespoon of fresh ginger, minced 1 teaspoon of olive oil
Preparation:
Pre-heat oven to 400 degrees.
The Rub: Combine the sesame seeds, pepper, coriander and salt in a shallow dish.
Coat one side of the salmon fillets with seed mixture, leaving the skin side down.
The Marinade: Combine the orange juice, honey, white wine, soy sauce and ginger, and set aside.
Heat the oil in a non-stick pan (which can be placed in the oven) on medium-high heat.
With skin side up, cook the fillets for 4 minutes, turn the salmon and pour the orange juice mixture, over the fillets. Allow the mixture to boil, about one minute.
Place in oven for 5-7 minutes or until salmon begins to flake.
Serve immediately, you'll love it!
