Shrimp with Snow Peas Stir Fry
Oh, I love the summer! The garden is in full bloom and we are enjoying the benefits of lettuce, swiss chard, kale and snow peas. I think the toughest part about snow peas is not eating what you have picked before you get into the house.
Last week, we got to reap the benefits of the first large bowl of snow peas and sugar snap peas. With a bag of frozen shrimp defrosting, I knew I would be looking for a stir fry recipe for dinner. I kept looking for something with an orange glaze and was having no luck. I finally came across this great recipe from White on Rice Couple called Shrimp Stir Fry with Sugar Snap Peas. It had a wonderful glaze of soy sauce, honey, and lime juice along with fresh ginger and garlic. As I read the recipe, I could envision how good the dish would be.
After peeling the shrimp, I had all the ingredients ready to go and in less than 15 minutes we had an amazing dinner. The shrimp and snow peas were delicious together. The glaze had big flavor with the fresh ginger, garlic, soy sauce and lime, some great heat and freshness from the cilantro. As much as the original recipe called for pasta, I really liked how nicely the rice tasted with the glaze.
This is a great summer recipe which allows you to use fresh ingredients from the garden, perfect for any warm (or hot) evening. If you need to switch it up a bit, think about adding chicken instead of shrimp or add some baby carrots and/or baby corn for a little more flavor and color.

Recipe for Shrimp and Snow Peas Stir Fry (Adapted from White on Rice Couple and Jamie's Food Revolution)
4 tablespoons of soy sauce
the juice of 1 lime
1 teaspoon of fresh lime rind
1 teaspoon of honey
2 teaspoons of sesame oil
1-1/2 inch of fresh ginger, peeled and finely chopped
4 cloves of garlic, peeled and finely chopped
1/2 teaspoon of chili pepper flakes
1 pound of large shrimp, shelled and de-veined (we used frozen)
2 cups of snow peas
1/2 fresh cilantro, roughly chopped
3 cups of white rice (cooked according to directions)
Preparation:
1. In a small bowl, mix together soy sauce, lime, lime rind, honey and sesame oil, put aside.
2. Begin cooking rice according to directions.
3. Over medium-high heat, add peanut oil and then quickly saute (about 1 minute) the ginger, pepper flakes and garlic.
4. Add the shrimp and cook on both sides until almost cooked through, then add the snow peas and the soy sauce mixture.
5. Saute until the peas are heated thoroughly, about 3 minutes.
6. Remove from heat and stir in the cilantro.
7. Serve immediately over rice.
